Carrot Halwa Cookies Recipe
A delicious spice cookie.
Ingredients
- 6 tbsp unsalted butter
- 2/3 cup Truvia or sugar equivalent
- 1/4 cup Grandma’s® Original Molasses
- 2 cup almond flour
- 1 tsp. Clabber Girl® Baking Soda
- 1 tsp. ground cardamom
- 1 1/2 tsp Spice Islands® Ground Saigon Cinnamon
- 1/2 tsp Spice Islands® Ground Nutmeg
- 1/2 tsp salt
- 1 tsp orange zest
- 3/4 cup carrots, grated
- 1/2 tsp Spice Islands® Pure Vanilla Extract
Directions
- Preheat oven to 325F.
- In a small saucepan, melt the butter, sugar, and Grandma’s Molasses over medium until sugar dissolves.
- Mix flour, baking soda, cardamom, cinnamon, nutmeg, salt and orange zest in a large bowl. Make a well in the center and add the butter mixture.
- Add carrots and vanilla and stir until combined.
- Place tablespoons of the dough onto a lined cookie sheet and bake for 15 minutes or until done.
- Rest for 5 minutes on a cooling rack and enjoy!
