Golden Pear Cake Recipe
Ingredients
Pear Layer:
- ¼ C. butter
- ¼ C. granulated sugar
- 3 Tbsp. Grandma’s® Molasses
- 1 – 15 oz. can sliced pears in juice, drained and juice reserved
Cake Layer:
- 1 C. + 2 Tbsp. cake flour
- ½ tsp. Clabber Girl® Baking Powder
- 1/8 tsp. Clabber Girl® Baking Soda
- ¼ tsp. salt
- ¼ tsp. Spice Islands® Ground Cloves
- ½ C. Crisco® Butter Flavor All-Vegetable Shortening
- ¾ C. granulated sugar
- 3 large eggs
- 1 tsp. Spice Islands® Pure Vanilla Extract
- ¼ C. milk
- 1 tsp. lemon juice
- 2 Tbsp. pear juice, reserved from can of pears
Directions
Pear Layer:
- Preheat oven to 350°F.
- In a small saucepan, stir together the butter, sugar and molasses.
- Heat over medium-low heat, stirring constantly, until the butter is melted and the sugar is dissolved.
- Pour into the bottom of an ungreased 9-inch baking pan.
- Slice any thick pears in half vertically then place the pears over the molasses layer; set aside.
Cake Layer:
- In a bowl, whisk together the cake flour, baking powder, baking soda, salt and cloves; set aside.
- In the bowl of a mixer, cream together the shortening and sugar on medium speed until well blended.
- Scape the sides and bottom of the bowl then turn back on.
- Add the eggs, one at a time, followed by the vanilla, blending in each addition, then scrape the bowl again.
- In a measuring cup, combine the milk, lemon juice and pear juice.
- On low speed, add 1/3 of the flour mixture followed by half of the milk mixture.
- Add another third of flour mixture followed by the rest of the milk mixture.
- Then add the remaining flour and stir until well blended.
- Pour over the pears and spread out evenly.
- Bake for 30-40 minutes.
- Remove from the oven and immediately invert onto a serving platter.
