Gingerbread Cookie Cups Recipe

Ingredients
Cookie Cups:
- ¾ C. Crisco® All-Vegetable Shortening Butter Flavor
- 1 C. granulated sugar
- 1 egg
- 6 Tbsp. Grandma’s® Molasses
- 2 C. all-purpose flour
- 1 ¼ tsp. Clabber Girl® Baking Soda
- ½ tsp. coarse salt
- 1 ½ tsp. Spice Islands® Ground Saigon Cinnamon
- 1 tsp. Spice Islands® Ground Ginger
- 1 tsp. Spice Islands® Ground Cloves
- ½ C. turbinado sugar (optional)
Orange Cream Cheese Filling:
- 8 oz. cream cheese, softened
- 1 C. Crisco® All-Vegetable Shortening*
- 2 tsp. orange extract or 4 tsp. orange zest
- 1/8 tsp. coarse salt
- 4 C. powdered sugar, sifted
- Sprinkles, optional
Directions
Cookie Cups:
- Preheat oven to 350°F.
- In a mixing bowl, cream the shortening and sugar for 3 minutes or med-high speed.
- Add the egg and molasses and blend in on med-low speed for 1 minute.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger and cloves until well blended.
- Add the flour mixture to the mixing bowl and stir on low speed until fully incorporated.
- Spray a mini muffin tin(s) with Baker’s Joy® No-Stick Spray with Flour.
- Scoop out the dough into tablespoons and roll in the turbinado sugar.
- Press the dough into the mini muffin tin until the top of the dough is flattened.
- Bake for 8-10 minutes.
- As soon as the cups are removed from the oven, use the back of a measuring teaspoon to press the top of the cookie down, forming a cup.
- Allow to cool in the pan.
- Once cooled, fill with Orange Cream Cheese Frosting and decorate with sprinkles.
Orange Cream Cheese Filling:
- In a mixing bowl, cream together the cream cheese and shortening until well blended.
- Blend in the extract and salt.
- Add the powdered sugar, one cup at a time, blending well with each addition.
- Mix until creamy.
- If the filling is too thick, use a teaspoon of milk at a time, to thin the filling.
- Fill the cooled cups and top with sprinkles.
- Store in an airtight container.
Tips
*You can use Crisco® All-Vegetable Shortening Butter Flavor if desired. The filling will be off-white in color.
