Gingered Gingerbread Recipe

Ingredients
- 2 C. all-purpose flour
- 1 Tbsp. Spice Islands®️ Ground Ginger
- 1 tsp. Clabber Girl Baking Soda
- 1 tsp. Spice Islands®️ Ground Saigon Cinnamon
- ½ tsp. salt
- ¼ tsp. Spice Islands®️ Ground Cloves
- ¾ C. Grandma’s®️ Molasses
- ¾ C. milk, heated just to a simmer
- ½ C. butter, softened
- ½ C. brown sugar
- 1 egg
- 1 tsp. lemon zest
- ¼ C. chopped, Spice Islands®️ Crystallized Ginger
Glaze
- 2 C. powdered sugar, sifted
- 1 tsp. Spice Islands®️ Ground Ginger
- 3 Tbsp. milk
- Spice Islands®️ Crystallized Ginger
Directions
- Preheat oven to 325°F
- Spray a 9X5 loaf pan with Baker’s Joy®️ Nonstick Spray with Flour; set aside.
- In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, salt, and cloves; set aside.
- In a small bowl, whisk together the molasses and warm milk; set aside.
- In the bowl of a stand mixer or with a handheld mixer, beat the butter and sugar until fluffy, about 3 minutes. Scrape the sides of the bowl.
- Beat in the egg and lemon zest. Scrape the sides of the bowl as needed. Mix until well blended.
- On low speed, add the flour alternately with molasses mixture, beginning and ending with the flour.
- Stir in crystallized ginger.
- Pour into prepared pan and bake for 55 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan on a wire rack.
Glaze
- In a bowl, whisk together all of the ingredients until smooth. Drizzle over cooled loaf.
- Garnish with crystallized ginger pieces.
